Country Butcher is owned by the Knapp Family. The Knapp’s purchased Country Butcher from its original owners as a ranch butchering facility and retail store, and have since grown the business to include USDA processing, Wild Game Processing, and an expanded selection of high quality and unique retail and wholesale products.
Country Butcher may be best known for our smokehouse and the high-quality bacon, ham, and sausage that has been rolling out of it daily for 40 years.
Today, one of the highest state-wide awards given by the California Association of Meat Processors is named the “Wayne Hall, Excellence in Curing” award, in honor of the skill and standard of excellence demonstrated by the late founder of Country Butcher, Wayne Hall. Our mission is simply to continue and build upon this legacy.
The retail store is open 9am-5pm Monday through Friday and full to the brim with meaty options to make your next meal perfect. Our knowledgeable staff is happy to assist with any questions and advise on different cooking techniques or methods.
